Whole 30 2: Day 18
I had a quick breakfast from Whole Foods. There were so few things I could eat! There was canola oil and/or sugar on pretty much everything. I found these turmeric roasted sweet potatoes, which were cooked in olive oil, but they ended up being kind of gross because they were cold and weren’t cooked all the way through. I also had a couple hard boiled eggs, blueberries, and pecans, which was a really simple but tasty combination.
I am so enjoying these coconut wraps stuffed with tuna salad! This was a more traditional tuna salad with pickles and onion. I found that placing the fillings on a diagonal worked out better than the other way so I could wrap it up and the ingredients didn’t fall out the other end.
I had dinner with my neighbors, but I forgot to take a picture of the salmon cakes I made. My neighbor made cioppino from scratch, which is a spicy seafood soup. I have been getting so many omega-3’s this week between the salmon, tuna, and seafood soup!
