Whole 30 2: Day 10
Today was a mega meal prep day and I made a frittata after not having made one in a long time!
I tried something new: I used leftover cooked potatoes and sliced them about 1/4 inch thick, laid them on top of the frittata, and then brushed some olive oil on top so they would make a delicious topping on the frittata. I used about half a bag of frozen sliced peppers and onions that I thawed overnight and then quickly sauteed to remove the excess water. There is also prosciutto and sage to add flavor.
Lunch was a small burger salad with some cubed potatoes.
Dinner was more leftover crockpot chicken fajitas. Leftovers make life so much easier, though I do get bored of them.
